Three Cheese Baked Penne Ingredients:
- 1 tablespoon of olive oil
- 1 pound of penne pasta
- 2 cups of ricotta cheese
- 2 large eggs beaten together
- 2 cups of shredded mozzarella
- 1/2 cup of grated Parmesan
- 2 1/2 cups of halved grape tomatoes (or 1 pint)
- 1/4 cup of fresh basil, chopped
- Freshly ground black pepper
- Sea salt
Three Cheese Baked Penne Directions:
Begin by greasing a large baking pan with cooking spray or olive oil. Preheat your oven to 375 degrees Fahrenheit. Then, bring a pot of water to a boil and add some salt. When the water boils, add the penne pasta and cook it according to the directions on the box. When it has finished cooking, drain the water. In a bowl, mix together the eggs and ricotta cheese. Then, add the cooked penne pasta, 1 cup of mozzarella, Parmesan cheese, tomatoes, and basil. Mix everything together and season it with salt and pepper. Pour the mixture into the pan and top with the remaining cup of mozzarella. Bake in the oven until the top is golden brown (approximately 30 minutes). Add some basil leaves to the top and enjoy!
